This perfect summer salad is just that!

It is packed with all the goodies that will make this an entrée salad that even the men in your life will love!

It brings just enough extra sweetness and zing to make it the perfect dressing for this summer meal

Red Raspberry Vinaigrette Dressing To be honest, I am NOT a salad person

I have never been the girl that orders a salad on a date or diets on rabbit food

I prefer to sink my teeth into a juicy steak rather than nibble on lettuce

Anytime that I have a salad it has to be packed with way more than just croutons and dressing for me to enjoy it, so after having a Savannah Chop Chicken Salad at McAllister’s I HAD to try recreate something similar at home. I have never raved about a salad in my life and that is all I could do when eating this. I just kept thinking I’ve got to make this at home. So here it is, a pretty darn close version of the salad that completely changed my mind about salads.

The main difference is the dressing. The first thing that I knew that I was going to use was this Red Raspberry Vinaigrette. It is so good and paired perfectly with this salad. I couldn’t imagine using anything else. My husband was even raving about it. He was like “maybe I’ve always liked vinaigrette dressings and I never knew it!” I think it was just because this tastes so good!

A simple, delicious, and filling meal that uses our addictive Red Raspberry Vinaigrette Dressing.

Ingredients
  1. Dillman Farm's Red Raspberry Vinaigrette Dressing
  2. 2-3 romaine hearts, chopped
  3. 2 cucumbers, finely chopped
  4. 2 roma tomatoes, finely chopped
  5. 1/4 cup dried cranberries/blueberries/cherries
  6. 1/2 cup crumbled feta
  7. 1/2 cup chopped pecans
  8. 2 chicken breasts, grilled and sliced
Instructions
  1. Toss all chopped ingredients in a large bowl and top with chicken and dressing
  2. Easy and delicious!

I love my crock pot. I don’t care that its getting warmer out, I still love making everything and anything in it

This can be made into so many different meals too. You can have it just as is with grilled peaches on top or shred it on sandwiches or slice it on a hearty salad.

  1. Place chicken, preserves, and barbecue sauce in crock pot for 5 hours on low or 2 1/2 hours on high
  2. Shred chicken or dig right in

 

Apple Barbecue Mini Pita Pizzas

These little gems are easy, delicious and you can make them in a snap

My favorite pizza is a BBQ chicken pizza, and when I was given this Apple Barbecue Sauce from Dillman Farm I immediately wanted to make pizza.

That’s the best part of BBQ pizza. You can change and use all kinds of barbecue sauce and you get a different flavor set of flavors each time. This apple barbecue sauce is great. It has so much flavor and packs just enough heat.

I made four different varieties of these little pizzas and you could probably come up with ten more. I like the classic pepperoni or cheese. You could also do a pesto sauce topped with tomatoes, mozzarella and a little balsamic drizzle for a “caprese” pizza. YUM!

If you’ve never used a pita other than from a big bag of chips, you are missing out!

You can find delicious pita bread in your local grocery store. I love the whole wheat pitas because it adds a deeper, almost nutty favor to a pizza crust and it’s healthy. You can also split them open and fill them with whatever for a sandwich or wrap. I love filling them with Caesar salad and grilled chicken…YUM!

A quick grill of the pita bread and it’s ready to be your canvas of pizza toppings!

RECIPE:

Ingredients:

BBQ STYLE PIZZA:
Pita Bread
Apple Barbecue Sauce
Chicken, cooked and cubed
Ranch Dressing
Cheddar Cheese
Parmesan Cheese

Directions:

Preheat oven 400°
Grill both sides of pita bread until you get good grill marks, only a couple minutes a side
Top with BBQ sauce, chicken, ranch dressing, and both cheeses
Cook in oven until cheese is melted, about 5-10 minutes

NOTE: You can use however much you would like of the toppings, it is really preference. I don’t like a pizza drowned in sauce but I love it heaping with cheese, it’s whatever you prefer!

I am crazy picky when it comes to salsa.

I rarely get it because there just isn’t a jarred salsa that is that good.

I am all about flavor and the right texture. Most salsas have this overwhelming tomato flavor (I know, I know, it’s salsa) but it’s also the ONLY flavor. This All-Natural Smoky Chipotle Salsa has seriously blown my salsa expectations out of the water. I’m not trying to be dramatic (for once in my life). The flavor that this salsa packs will put all other salsa’s to shame. It is so unique and addicting, all you honestly need is a bag of tortilla chips and a jar to make this your favorite.

However, I going to blow your socks off even more…

It’s an easy, simple, yet ridiculously savory and flavorful meal packed into one pan. This smoky salsa makes this dish over-the-top.

Ingredients

  • Rub:
  • 1 teaspoon dried cilantro leaves
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salsa Bake:
  • 4 boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 jar smoky chipotle salsa
  • 1 cup chicken stock
  • 1 cup water
  • Juice and zest of 2 limes
  • 1 cup, uncooked, brown or white rice
  • 1 1/2 cups shredded Monterey Jack cheese
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°
  2. Mix all seasoning to make your rub. Once mixed, rub all over both sides of your chicken and set aside
  3. Using a deep casserole dish: mix beans, corn, salsa, chicken stock, water, lime juice, lime zest and uncooked rice
  4. Stir until combined and then tuck your chicken into the mixture. (try and get them to the bottom of the dish, under most of the rice)
  5. Cover tightly with foil and bake for 1 hour
  6. Uncover, top everything with shredded cheese and fresh chopped cilantro and put back in the over at 450° until cheese is melted and bubbly (about 8-10 minutes)
